Our oysters are grown in the cold, clean waters surrounding Islesboro, Maine, where the tides and the bay shape every oyster. Their flavor reflects the water they’re raised in—clean, briny and slightly sweet, influenced by the changing salinity, minerals, phytoplankton and tidal flow of Penobscot Bay.
They begin as tiny seed, or “spat,” in a oyster nursery before coming to Islesboro to grow in floating gear. As they mature, they’re moved into cages and tended throughout the growing season. When winter settles over the bay, the cages are sunk to the ocean floor, where the oysters spend the coldest months before being brought back to the surface in spring.
