Our oysters grow in the cold, clean waters off Islesboro, Maine. Flavor shifts with the bay—sweet, briny, and clean—thanks to phytoplankton, salinity, mineral content, and tidal flow. Seed (“spat”) starts in a Midcoast nursery, then matures in floating gear before moving to cages. In winter, we sink cages to rest on the bottom until spring.
