NATIVE TO THE EASTERN SEABOARD & THE GULF COAST, OYSTERS TAKE ON THE FLAVOR CHARACTERISTICS- SWEET, BRINY, CREAMY, BUTTERY ETC—FROM THE WATERS THAT THEY GROW IN. PHYTOPLANKTON (WHICH THEY FEED ON), TEMPERATURE, SALINITY, MINERAL CONTENT, & TIDAL FLOW ARE ALL IMPORTANT FACTORS FOR PRODUCING THE PERFECT OYSTER.
OUR BABY OYSTERS, WHICH ARE CALLED "SPAT", ARE GROWN AT A NURSERY IN MIDCOAST MAINE BEFORE THEY ARE BROUGHT TO OUR LEASE SITES IN THE HIGHLY NUTRITIOUS WATERS OFF OF ISLESBORO. THEY ARE PLACED IN BAGS THAT FLOAT ON TOP OF THE WATER COLUMN.
AS OUR SPAT GROWS, THEY’RE TRANSITIONED INTO DIFFERENT BAGS THAT ARE THEN PUT IN CAGES, WHERE THEY RIDE THE WAVES OF PENOBSCOT BAY.
IN THE WINTER, DURING THEIR LONG HIBERNATION, THEY’RE SUNK TO THE BOTTOM OF THE BAY TO KEEP THEM HAPPY AND PROTECTED.
